Baingan Bharta starts with roasting eggplants on an open flame until the skin chars and the inside becomes smoky and soft. The mashed eggplant is then cooked with onions, tomatoes, ginger, garlic, and spices in mustard oil or ghee. The result is a smoky, rustic, and traditionally rich curry that tastes best with hot roti or makki di roti.
